Our Wild Frenchman cider is a unique cider, that is traditional both in handling and finish. Our cider maker chose four different French apple varieties to create this blend. The apples’ juice were left to a long, slow fermentation using the natural wild yeasts found on the apple’s skin.
The result is a full bodied cider, with relatively high acidity and dry-ness and completely unique in our range. This is our Aussie take on the traditional European farmhouse style ciders, similar to those of northern Spain, and across into Brittany and Normandy.
Over the past 10 years we have really established ourselves in the Australian cider market, particularly in the space of traditionally made ciders. Our cider maker Mackie has a great passion for exploring what each heritage cider apple can create when transformed into cider. Experimenting with different yeasts, fermenting methods and styles and lengths which are all important too.
