Handcrafted using a range of our organically grown heritage apple varieties, our Brut Cider is top quality. The cider is well suited to those that much prefer a drier style, however it is not quite bone dry. In the context of champagne and other sparkling wines, the term “brut” denotes a specific level of sweetness. It indicates that the wine is dry, with minimal residual sugar. We feel this term is well-suited to this style.
This dry finish is enhanced by the choice of apples harvested and fermented for this blend. Our cider-maker Mackie has used a mixture of Bitter-sharp and Bitter-sweet apples, such a Kingston Black, Yarlington Mill, Browns Apple and Stoke Red. These were all picked from our organic orchards, by hand.
These high quality English-heritage apple varieties bring a depth and complexity to cider that is often hard to achieve with regular eating apples. Therefore our Brut Cider has a lovely balance of tannins, bitterness & acidity. There is a textured mouthfeel at each sip and the flavours last long on the palate
